Presume you have access to the Macbook right now? In addition to a keylogger (which you must install in case you are locked out), you can get the stored logins and passwords from the keychain access app (use spotlight to find it). Opening an individual entry will allow you to see the password associated with it.
It really depends on what you are after. Having physical possession of the computer is everything. If you have another mac, you can place the macbook in firewire target disk mode, and access its hard disk that way. Try googling "target disk mode mac" for instructions. You will need to have the right cable, which varies depending on the computer model you have.
