Ok...to get my mind off of this stuff, I want to make Christmas Cookies. I have baking stuff. I want to know what is your favorite recipes for cookies and what you like best on them. I know lots of people make different kinds. I'm forever in search of the perfect sugar cookie recipe. I found a good one at www.allrecipes.com for cream cheese sugar cookies....they were good and easy to be able to decorate on also!

I will post some of my recipes once I dig them out....I'm interested in reading and trying some of yours....

Hey twiisty your thread caught my eye! I can't wait to share this one (EASY) and DELICIOUS recipe with you but I have to come back and post it later. I have some others too. Yum... The cream cheese cookies DO sound very good...

Okay, these are the little white snowball cookies--but this recipe, to me, is the best!

MEXICAN WEDDING COOKIES (Bizochos de boda)

2-1/2 cups flour
1/4 teaspoon salt
1 cup finely chopped pecans
2 cups (approximately) confectioners' sugar
2 teaspoons vanilla extract

  1. <font size="2" face="Verdana, Arial">In a bowl, stir together flour, salt and pecans to combine thoroughly; set aside. Preheat oven to 350 degrees.</font></li>
  2. <font size="2" face="Verdana, Arial">In mixer bowl, combine softened butter and 1/2 cup of the confectioners' sugar, beat until fluffy. Blend in vanilla. Gradually add flour mixture, beating just until dough clings together.</font></li>
  3. <font size="2" face="Verdana, Arial">Use a spoon or your hands to gently shape dough into 1-1/2 inch balls. Place about 2 inches apart on ungreased baking sheets. Bake until firm and lightly browned (20-25 minutes).</font></li>
  4. <font size="2" face="Verdana, Arial">Spread about 3/4 cup of the remaining confectioners' sugar on a rimmed baking sheet. Transfer baked cookies to sugar-lined baking sheet; generously sift the remaining confectioners' sugar over warm cookies, turning cookies in the sugar, if necessary, to coat all surfaces. Transfer to wire racks to complete cooling.</font></li>
<font size="2" face="Verdana, Arial">Makes about 30 (1-3/4 inch) cookies.

BTDT, I love the mexican wedding cookies, my mom used to make them all the time. They just melt in your mouth. Yummy.

My favorite bar recipe is for Chocolate Chip Bars

Crust:
1/2 cup butter
1 cup flour
1/4 cup sugar

Filling
1 cup graham cracker crumbs
1/2 cup chocolate chips
1/2 cup pecans (optional)
1 teaspoon baking powder
1/4 teaspoon salt
1- 14 oz can sweetened condensed milk

Frosting
1 1/2 cup powdered sugar
1/2 cup butter
1 teaspoon vanilla

Heat oven to 350
Cut butter into the flour and sugar till crumbly. Press into an ungreased 9x13 pan. Bake at 350 for 10 minutes. Cool for 10 minutes.

Combine the filling ingredients. Mix well. Spread over the cooled crust.
Bake 15-20 more until the top is medium brown. Cool completely. Frost.

Frosting, Let butter soften a bit. Beat in sugar and vanilla.
