R - actually, you need to edit it from a page or two ago!! I saw it there, and thought maybe you'd e-mailed me - got two e-mails, one just like yours, except it had quotation marks around the first word like "xxxxx" - I was afraid it was a virus or something, so I deleted it without opening it...then, I saw your address, and said well, maybe? anyway, ok, thanks!

I'm one of those cooks that believes that if it smells good, it'll taste good except in the cases of vanilla extract and baking chocolate....lmao (has everyone else's kids tried that sneaky one....I remember doing it after school one day....and the last pkg of baking chocolate I opened had nibbles out of it that EXACTLY matched dd's gap from where the tooth fairy took a front tooth).

Here it is:

Make a roux - but not one with butter and flour, use a nice oil and flour. Add water to make a gravy - the mess'll look like papier mache paste at this point. Lower the heat to simmer. Addd chili powder till it's the color of the last enchilada gravy you had at your fav Mexican Taqueria. Add cumin till it smells good (doesn't take more than a few dashes). Add garlic powder - imo, you need enough to keep the vampires away for at least a week. Add onion powder. Now, back to when you made the roux/gravy....if you have no urge to add extra salt, use beef stock or chicken stock (or bullion) at the gravy stage. If you didn't have beef or chicken stock, at this point add salt TO TASTE.

I prefer my gravy meatless, but you can add cooked crumbled carne (beef or pork - carne means either, it just means meat) to your enchilada gravy. I do this when I'm making cheese enchiladas....but if I'm making beef, I don't put the carne in my sauce.

USE CORN TORTS for the enchiladas themselves. Here's the kicker (and it adds NO extra calories or heart cloggers or anything <img border="0" title="" alt="[Eek!]" src="images/icons/shocked.gif" /> ): Before you roll your enchiladas, dip the torts on each side for a couple of min in hot oil. Don't fry them enough for them to be crunchy - just enough that they soak the oil up a bit. This'll keep them from sucking up your sauce and having dry enchiladas. Stuff them with your fav stuffing - my FAV is sharp cheddar cheese. Don't put the sauce on till right before you put them in the oven....and they only need to be in the oven long enough to melt the cheese. The kicker here - true enchiladas: Must have chopped fresh onions on top.....
