Oh well.....tonight we will spend it as we usually do, together as a family watching fireworks and a few movies. We plan to go to the beach early in the morning before all the 'tourists' get up. LOL!!! <img border="0" title="" alt="[Wink]" src="images/icons/wink.gif" />

Redhat - first a question before I reveal my secret. Did you get your user name from the observatory up there in No. Cal???

Okay, secret to chocolate rum cake... For mine I drizzle the rum on (spiced rum like Capitan Morgans) on the top of the cake after it has cooked. If I am serving it to people I will make the cake early in the morning and drizzle rum on it throughout the day. The cake recipie that I have is so good that you don't need frosting on top, especially if you top it off with the hooch.

I'll go easy on the rum though, my mood isn't great so it wouldn't do me any good either! <img border="0" title="" alt="[Razz]" src="images/icons/tongue.gif" />

i would love to be a personal chef...if only i could get people to realize skinny isnt the way to go---i dont cook skinny well!!! ROTFLMAO

like yesterday for lunch i made myself herb crusted rack of lamb......good god that was good!!! (i usually have that christmas for dinner and didnt get to this year so i was craving it..LOL)

hubby is finally home so i will be on and off the rest of the night...gonna go make some shrimp tempura ...then dip it in hooters suace!! hooters sauce is second only to bacon...everything is better with it.....

Thanks for the quick response but this MBer requires details. You know like a real recipe? LOL!!!

I used to make the rum cake with a yellow cake mix and rum syrup and walnuts but your choco one sounds yummy.

BTW, RH is a computer geek of sorts (but a cute one - LOL!!!). I think his name has to do with all that digital stuff. <img border="0" title="" alt="[Big Grin]" src="images/icons/grin.gif" /> Of course, if you call out to him on a post..... he will come..... and give a better explanation. <img border="0" title="" alt="[Big Grin]" src="images/icons/grin.gif" />

Hey, anyone got a good recipe for bourbon balls? My dad used to make it and I lost my recipe. The chocolate kind with I think graham crackers and walnuts, aged for at least a month and rolled in powdered sugar...... yum.... but even if I make it now, I still have to wait a while. <img border="0" title="" alt="[Frown]" src="images/icons/frown.gif" />

My NY resolution ... to start poisoning my family with experiment from William Sonoma's cook book series.

We survive another year. I am getting ready to go to the City. I was planning to just watch 2 DvD/soda pop/pop corn but I could do that next years and baby sits a bunch of teenagers.

I will keep checking this thread as the night goes. I am wired <img border="0" title="" alt="[Big Grin]" src="images/icons/grin.gif" /> .

This is Kimmy's recipe for Bourbon Balls. I stealed it from her one day when she wasn't looking. <img border="0" title="" alt="[Big Grin]" src="images/icons/grin.gif" />

1 cup finely chopped pecans
1 1/2 cup of confectioners' sugar, divided
2 tablespoons of unsweetened cocoa
2 ounces of bourbon (Kentucky bourbon, of course)
1 1/2 tablespoons light corn syrup

Combine vanilla wafer crumbs (I've also used graham cracker crumbs), chopped pecans, cocoa, and confectioners' sugar. In a measuring cup, blend the Bourbon and corn syrup; stir into the dry mixture. When thoroughly blended, cover and refrigerate for an hour or more. Sift about 1/2 cup of confectioners' sugar onto a large piece of waxed paper. Shape small amounts of the dough into balls then roll in powdered sugar. Store tightly covered in the refrigerator. These can be frozen. Makes about 3 dozen.

Now then, if you set the little dudes in a covered container in the fridge for a few days, the bourbon'll make 'em taste stronger....then if you want to get fancy schmantzy, you dip each one in melted chocolate bark and let set.

What's really grand about these is that you make 'em then get to tell the young 'uns that they are "grown up" cookies and all the adults don't have to share (hehehe).

HEY! There are some foods that kids just "can't appreciate"...bourbon balls, shrimp cocktail, ceviche, so we adults have to eat them so the kids won't have to....(I know, I'm evil)


Well, for me I just got back from my (short) walk in the freezin cold and frozen north. So off to watch a movie.

First of all, I don't think we have ever talked so let me say, while I have the floor so to speak, that I love your posts!

Okay, so ya want the recipie to my chocolate cake? Hmmm, what do I get in return??? Ah what the heck, it's New Years!!!

Chacks Chocolate Cake:

1 ½ cups flour
3 tablespoons cocoa
1 teaspoon baking soda
1 cup sugar
½ teaspoon salt
5 tablespoons oil
1 tablespoon vinegar
1 teaspoon vanilla
1 cup cold water


Mix dry ingredients together then add the wet ingredients EXCEPT water.
Add water ½ cup at a time while mixing. It will look like mud but that's fine.
Pour into 8” or 9” square cake pan.
Bake at 350o for ½ hour

If you want to frost it here is my frosting recipe that goes with the cake:

Chacks Chocolate Frosting:

2 tablespoons soften butter
4 tablespoons cocoa
2 tablespoons coffee
2 teaspoons vanilla
1 ½ cup powdered sugar

Beat ingredients together. If needed, add more coffee, a few drops at a time.

If you want to make a rum cake don't frost it and just drizzle spiced rum over the top of the cake. Not too much though, just enough to give it some zip!

Went to dinner with my mom....stuffed my face with Jumbo Shrimp Brochette....yum. Then dropped my boy and his friend off at the roller rink. Now I'm all alone....I need a date. My D goes through in about a week. Anyone in Houston?

Trust me I'm done with my M...check out my thread, "We're getting a D and now he wants to come back."

No, my S is at the roller rink for a NYE party...lots of his friends. Its the "hangout".

And I NEED A DATE! I just want to have fun, that's all. I'm tired of being alone. There is someone waiting in the wings, but he doesn't want to start anything until the D is final.

I just want to take my mind off of this whole mess. I don't want to sit at home alone and mope around. All my friends are married and off doing couple things. And my one single friend I tried to hook up with has a "HOT" date. I want a "HOT" date.

Hey, I've gone from a size 12 to a size 2 (sometimes 4), I run 2 miles every day, and I feel really good about myself. Now I want a date! Is that so bad??? <img border="0" title="" alt="[Wink]" src="images/icons/wink.gif" />

Happy New Year, I was probably one of the first to see in 2005 and say good riddance to 2004! I'm in Asia and we're all still reeling from the Tsunami disaster. Everyone in HK seems to know someone affected by this terrible disaster.

On a personal note, I was not sad when the new year chimed in and I was at home alone with my kids. My husband has been a party pooper for years and we never made a big deal about new year celebrations. 2004 has shown me the dark side of human nature - my WH's actions were bleak and immoral. It was a shock but now my eyes are open. 2005 is calling and I hope I can remain positive and do the best I can for my family. Blessings to all of you on MB. You have helped me through some tough times. TT
