Just wondering:
How does one go about searching a computer for stuff such as:
Porn
Any contact with anybody of the opposite sex, such as new accounts, dating sites, etc.
Anything else I might need to know
WITHOUT the other person knowing?

Your best bet is a keylogger program.
What they do is run in the background, without any type of icon either in the tray or taskbar and record everything typed on the keyboard, web sites, passwords etc.
A really good one that I've used before is called
"Perfect Keylogger"
Plug that name into just about any search engine and you'll get plenty of places to download it from.
