Good morning all of you. This Texasgirl, home for a change. I am not working today. With all the "stress"posts wanted to introduce some lightness.

Didn't ya'll have a morning Kaffee Klatch awhile back? why not Now

I am feeling good. My house is for sale, no bites, but that will come. Then I will be where I want to be, Houston, TX

I feel like a good cup of java...what's cooking? I would love to have another koffee klatch...I was thinking the other day, "self...why don't you post about one" and you beat me to it! What is everybody bringing? I'll bring stuff but need to know what it is...Brunch? Lunch?

Let me know...I could bring some New Orleans specialty blend chicory and beignets...they are the best!

Of course, being pregnant, I crave the shrimp po-boys fully dressed.....

Tell me more about your house...I may decide to move in it!!! I miss Texas and first chance I get I'm moving there....or Alaska...gotta get rid of this swampyland heat and humidity here...I despise Louisiana....great thread Texasgirl...hopefully the others will be along shortly.

Thank, you <img border="0" title="" alt="[Smile]" src="images/icons/smile.gif" /> I thought I would check in to see who came by, if any. My house is 4 bdrms, lvng room, an added on room that we use as gameroom for the kids. kitchen, breakfast room adjacent to the house is our 2nd lot with above ground pool
We are S of Dallas and Ft. Worth 30 min each way.
1850 sq ft. it's a cute little house.

I have been drinking coke all day. Getting ready to go to grocery store. Checking in on apts, so we can move to Hou anyway until house sells. The market here has gotten slower, and harder to sell this time of year anyway.

I think I will look for a good chocolate cake while at the store to share when I come back.
Maybe some Virgin Pina Coladas also.

When is your baby due? A new baby, such an exciting time. My "baby" is 9 and fighting to establish himself as "not a baby anymore"

I forgot to say, maybe it should be brunch, since it is so late. Or, a potluck, what ever any one wants to share. Let's just share good feelings and thoughts here. I support the expressions of the others, but it gets so stressful and sometimes nonproductive.

Maybe some spice tea or vanilla coffee would be good and some chicken salad sandwiches. I am a food junky, so would need some chilps. And, it's not TX without Salsa and chips. If we go all day, we'll break out the Margaritas after 4

Well I have to run, enjoy the sandwiches, coffee and tea, coke is available also. I'll be back with dessert.

Baby is due around 05/15/03.

I just came in from my OB appt. had a hard time finding the kid to hear the heartbeat, but we found it and it's fine....(don't know what IT is...but I want to find out soon, so I can get the appropriate clothes out of the attic!)

My eldest baby is 9...she thinks she's all that...

Right now, to tie me over until everyone else brings the goodies I'm eating one of my favorite sandwiches...peanut butter and marshmellow...I also like pumpernickle and cream cheese...but not all together at once!!! LOL....

Hopefully the others will be here shortly....

Au contraire, Mon Ami....I think the board has been quite productive for some of us, enabling us to vent some important issues. TG</strong></font><hr /></blockquote><font size="2" face="Verdana, Arial">I am going to share with you my own special recipe that I have guarded tenaciously for years, unwilling to share. But in the spirit of comraderie, I am going to post it now.

Chicken ala Catnip

4 chicken breasts, boneless-skinned, washed and set aside. Pull off all the icky goobies (like that little extra piece of cartilage and artery yuk, yuk, yuk!)

Mix together in plastic zip-lock bag:

1/3 bread crumbs
1/3 cup parmesean cheese
1/3 cup flour
1 tsp salt
1/2 tsp pepper
1 tsp basil flakes

Dip the poulet (French for chicken) in extra virgin olive oil, then shake, shake, shake, shake that chicken in the bag of crumbs, cheese, et al.

Place coated chicken in a lightly (PAM) sprayed 8 X 8 or 7 X 9 glass baking dish.

Top with finely shredded mozzarella cheese and chopped fresh, ripe tomatoes and a few pieces of chopped fresh basil. Lightly sprinkle chicken dish with olive oil.

Bake at 325 degrees for 45 to 60 minutes and voila! Your guests will go nuts. I promise.

I have a Rhubarb Bread recipe that is so incredible it really is incomparable and I never give out, but I will be willing to e-mail it to anyone who would like it...too precious to post openly.

To the afternoon soiree, I am bringing creamcheese pumpkin bars for dessert and sparking cider.

You are right, sometimes stress and strife do resolve somethings, I just hate it. I am a middle child, the peacemaker, so I always try to smoothe feathers and fur. Can you feel my scratching your head between your ears? Relax, and let the uninformed, ill-informed, learn.

Some have to learn the hard way and some never learn. Again, as you said, this place is a warm next in which we come to vent.

Anyone for a Pina Colada or Margarita?
I have the salsa, I think Catnip ate the chicken salad sandwiches.

Guilty as charged, Middle Child, guilty as charged. The chicken salad is gone (burp) please don't bring out tuna, it makes me crazy.

So, you're a Middle Child, are you? Hmmmm....that explains a lot, does it not? I am a lonely only, myself, and I married the oldest of eight so Bipolar and I have some really, really interesting power struggles and find that the intensity can start with a cup of morning coffee and last until the lights go out, which is the best part of the day.

My daughter, Bipolar's daughter, my step, is our youngest but more like a Middle becauwse of the two older boys...a real peacemaker and conflict avoider. But, she like you, has a will of steel. Bipolar refers to her as Lion-hearted. She seems so laid back and easy going and she is to a point, but if she wants something, nothing, I mean nothing will stand in her way. Is this the way you are?

She is extremely diplomatic, too and will go to great leangths to calm the waters, promote peace.

Now where the hell are those pina coladas? What does a gal have to do around here to get a drink? Please don't put it in a saucer.

Yep that's me. I think that's we are still together. I hate to lose. I wasn't going to give up what was mine to the little witch who decide to interject herself into my life without an invitation. I am a passive-aggressive, and I won't give in if I know I am right, and I am always right, n'est pas?

The frozen Pina colada's are here enjoy, I had to go pick up my daughter at school.
She told me she enjoyed not having a working mom today. She wished I didn't work. HMMMMMM?

I do it to make up the difference we don't have because of child support. Know how that goes?
I do also get enjoyment out of it. I substitute teach and I enjoy the kids. They make me laugh

Ok, I desperately need new recipes. In order to receive, you must give, so.....

CHORIZO CORNBREAD

2 lbs. chorizo
14 eggs
1 lb. cheese (I used Colby Jack, but you can pick what you like)
3 boxes of Jiffy corn bread mix
2 cans of creamed corn
1 egg
1/3 c. milk

It's really easy to make. Cook down the chorizo in a large skillet and remove the fat. Scramble the 14 eggs and add to the chorizo. Slowly
cook the eggs until they have firmed up. The chorizo/egg mixture will be your bottom layer in the casserole.

Shred the cheese and layer on top of the chorizo/eggs. Be sure to leave about 1/2 cup to sprinkle on top.

For the corn bread, you mix the 3 boxes of corn bread mix with the 2 cans of creamed corn, 1 egg, and 1/3 c. milk. Pour into the casserole dish, over the cheese. This is your final layer. Sprinkle the remaining cheese on top and bake at 400 for about 25 to 30 minutes (until done). It takes about 45 minutes from start to finish.

It's an excellent breakfast casserole and a real winner at potlucks!

YUM! Thanks for the great recipe. I will make it next weekend and serve it with a pot of chili.

Cat-O-Nine Chili

2 lbs ground lean chuck, browned, salt & pepper
1 large onion chopped and sauteed
1 small green pepper chopped and sauteed
1 can (or two) Brooks Chili Beans (The secrets' in the sauce)
1 large can 16 oz diced tomatoes and juice
1 cup water
4 Tbsp chili powder
1 box Cremette macaroni rings (optional unless you are from Cincinnati)

Mix together

Simmer on low for at least 1 1/2 hours stirring several times

Serve with Ohbratti's Chorizo Cornbread and a big glass of ice water
