Funny you should write because I had made your famous enchilada's a while back and had a few guests over for it. My sister was one of them and she called me last night for the recipe...gave it to her over the phone. Of course making a roux is unheard of up here, so I explained that to her and the rest, even the putting enough garlic into it to keep the vampires away for a week ( <img border="0" title="" alt="[Big Grin]" src="images/icons/grin.gif" /> ). Her family LOVED it.

And Kimmy I also tried to make beer out of apple peelings like they do in Appalacia and it failed. Just mold...no fermentation. Did you try to make any?

I'm making Enchiladas for my family Fiesta tomorrow, 14 will attend. I'm making rice and nachos, we will have Sangria and Rita's, and I'm making brownies and I'm going to fry up some tortilla shells and shake cinnamon sugar over them.
