Hi, WAT!
You had mentioned in a reply to my thread that you have a good (and easy!) recipe for grilling fish that I could use when I fire up WH's humongous gas grill for the first time today.
If you have a chance, would you please post the recipe here or email it to me? My email address is in my bio.
Thanks! <img src="/ubbt/images/graemlins/grin.gif" alt="" />

Hi Pebs - I need to catch up on your other thread, but this is quicker for now.
Here's the recipe:
Chill down a six pack a few hours ahead of prep time.
(This works best with fillets)
Open a beer.
Quarter a couple lemons.
Light the grill and let it heat up to pretty hot.
Lay out the fillets flat on aluminum foil or one of those fish grill grates that have the small holes or small openings.
Cut pats of butter or margarine and distribute sparingly on the fillets.
Sprinkle dill seed on the fillets.
Lay the foil/grate on the hot grill and immediately squeeze plenty of lemon juice on the fish - you can't have too much.
Close the grill cover.
Get another beer.
Peek frequently after about 5 minutes for the fish to turn whiter. As it progresses, try to flake with a fork. When it flakes easily, it's done. Depending on the thinkness of the fillets, usually not more than 10 - 15 minutes. No turning required.
Serve the fillets with a spatula, be prepared for them to far apart - they taste the same.
Enjoy!

Thanks, WAT!
I have cooked...with FIRE! <img src="/ubbt/images/graemlins/grin.gif" alt="" /> I feel so macho.
The fish fillets came out great. The kids even liked them. Nothing exploded. I cooked them for one beer. Any more than that and I would have ended up on the grill myself (I'm kind of a lightweight when it comes to alcohol).
Thanks again.
