I saw on someone's post (in GQII, I believe) a recipe for stuffed pork tenderloin. I can't find it now. It sounded so delicious. I knew I should've printed it out.

That was Jelly - and it IS delicious, and easy.

Stuffed pork tenderloin


1pork tenderloin (1 pound)
1/2 C chopped onion
2 T butter
1 C soft bread crumbs
1/4 C minced fresh parsley
1/4 t rubbed sage
1/4 t dried rosemary, crushed
1/4 t salt
1/8 t pepper
1 egg, slightly beaten
1 bacon strip

Make a lengthwise slit about three-fourths of the way through the PTL, open PTL so it lies flat. Flatten to 1/4 in. thickness, set aside

In a small skillet, sauté onion in butter until tender. Add bread crumbs, sauté until crumbs are golden brown. remove from the heat. Stir in the parsley, sage, rosemary, salt, pepper and enough egg to moisten the ingredients

Spread stuffing on one long side of PTL to within 1/4 in. of edges. Close meat and place bacon on top, tie with kitchen string. Place on a rack in a shallow roasting pan, bake, uncovered at 350, for 50-60 min. Let stand for 5 min. before slicing.

Mellow,

If you make it according to that recipe it won't turn out right. The recipe needs a couple of Fluke-I-licious modifications:

1pork tenderloin (1 pound)
3 C chopped onion
8 lbs butter
1 C soft bread crumbs
1/4 C minced fresh parsley
1/4 t rubbed sage
1/4 t dried rosemary, crushed
14 t salt
1/8 t pepper
4 eggs, over easy
2 lbs bacon strips - crispy
toast
jelly
waffles

That oughta do. Another cooking disaster avoided! My work here is done.
