Go to Radio Shack or other electronic stores and get a digital activated voice recorder. Then put it in a safe place.

Realize you can't know all but be willing to settle with enough to prove your point and move forwrad.

can someone please recommend good brands that have noise cancellation so that you don't hear a lot of static and can hear the voices more clearly?

It is sad that your wife refuses to be open and honest with you about her feelings and other aspects of the affair. You cannot have recovery if she is hiding things from you. She tells you she had a sexual affair and put your health at risk for STD's based on a morbid experiment to test her feelings for you?...Oh please. (By the way I do hope you insisted that the both of you be tested). If you believe this then I have a bridge to sell you also. It is also clear that the affair would still be continuing if the OM had not got tired of her and broke it off. Clearly she was into him big time. Again she refuses to be honest with you so I do not see how your recovery can really be valid based on withholding information.

In addition, If the OM was her supervisor then you have a legitimate lawsuit against the company. Did you inform the company and did you inform the OM's spouse if he is married?
It sounds like your wife is still playing games with you. I would be very upset that she is still being dishonest with you.
