Well I bought a new set of Emeril ware when I was in Mississippi and have been too busy to really try it out.
So today I'm making my Tequila Fajitas.
My GF, Tabitha will be making the Margaritas.
Large Flour Tortillas
1lb Flank steak, 1lb Chicken breasts
1 garlic clove
1 Pack of fresh mushrooms
1 Bell pepper
1 small onion
Fajita seasoning
Obviously tequila.
Cut steak and chicken into strips and season with fajita seasoning. let marinate.
Cut the bell pepper into strips
cut the onion into strips
Mince the garlic clove and put it into a 12" pan with a tblspoon of olive oil.
Put the meat in with the garlic and start cooking.
Put all the veges on top and simmer.
When simmering put a half a cup of tequila in the mix, and cover.
Optional items are refried beans, black beans, shredded cheese, lettuce, tomatoes, guacamole and sour cream.
I always make black beans, refried beans and use the sour cream and cheese.
For the Margritas
1 can of Minute Maid Lime Aid
Tequila
Triple Sec
Ice
Take half the can of frozen lime aid and plop it into the blender.
Put the other half into a cup for later.
Using the lime aid can, add just half full of tequila and pour into blender.
Add just under one quarter full of triple sec and pour into blender.
Fill with ice and blend.
Keep adding ice until full.
Enjoy with the fajitas!

I have been wanting to get an iron platter for my grill, but the fry pan is much easier.
Just like my wife did, I knew someone would come along and say they can do it better without producing carp.
You may think your statement is unoffensive, but go back and re-read it.
I posted up something I thought would be lighthearted and fun, and you go and say that you can do it better and put down my method.

I'm still kinda sensitive to what I view as critical remarks by women.  My wife was really THAT abusive. EVERYTHING was criticized, and OM was perfect. I thought she was just funning at first, but the second reply had me wondering.

I would welcome recipe that I can try.
I love to cook and I do believe an authentic Texas recipe would be fantastic!
Mine is just what I whipped up for something that's quick to make.
Sorry, ML if I came across as angry, I guess I still got alot of healing to do.

It requires a big flat iron skillet, which I no longer have, so I used a 12" fry pan to cook the ingredients in.
Lemme tell you, there ain'r nothin like some fajitas cooked on an iron skillet.
I need to buy a new one and get it seasoned up rally good.

Hrmmm...
Seabird's preferred method:
Marinate flank steak in tequila/lime/fajita seasoning mixture in the fridge for 2-6 hours. Less time if you like a lot of lime, otherwise the juice will break down the meat too much.
Get a charcoal (NOT PROPANE) grille very, VERY hot. Some folks like to use mesquite briquettes for added flavor. Sear the flank steak on both sides, leaving the middle med-rare. In the mean time, brush a cast iron skillet with a high temp oil and set in the oven at about 400 degrees.
When the fajitas are done searing on the grill, slice them thin against the grain and throw them onto the hot skillet along with some sliced onion and bell peppers.
