We caught 5 last night and have about 8 pounds of fillets. I've never cooked it before. Here is one I found online -

My favorite barracude recipe is as follows.

Season barracuda w/ salt and pepper.

Throw it away in the garbage, replace meat dish with a good steak. Grill steak and eat.

Oh no that doesn't sound too good for the baracuda. Isn't that a shark? Or no.

Can't ya just cook it in ten foil with lemon and olive oil with a little dill, lake salmon? Grill about 10 mins per inch?

I don't know, don't listen to me.

Who knows, Weaver? Apparently the fish is very strong and has to be prepared right. Now, I'm cooking some fishcakes - with barracuda, onions, crackers, and egg. Then you fry it with flour.

I also have some marinating in lime juice, with garlic, tomatillo and onion. I'll let you know how it turns out.

Hey Believer,

I did a quick check on-line and found the following under recipes:

According to everything we have learned while deepsea fishing in south Florida, it is inadvisable to consume any Barracuda that is over 24"" in length. Older fish develop a certain type of bacteria that can be fatal to humans. Smaller fish are best smoked. I would not advise cooking barracuda as you would a traditional piece of fish.

Gosh, wish I'd read this before we ate them. I made fishcakes, tacos, and grilled barracuda. It was excellent. Hope it doesn't poison us - me and my son, his girlfriend, his roommate, my roommates, and 3 neighbors ate them.

And they were big barracuda. I'll let you know what happens next.

Hi believer,

We are studying food borne illnesses in Safety and Sanitation right now.

I looked this up in my textbook for you, these are the symptoms:

*Reversal of hot and cold sensations

*Nausea

*Vomiting

*Tingling in fingers, lips, or toes

*Joint and muscle pain

Symptoms may last months or years depending on how severe the illness is.

Other fish that are named besides barracuda: Grouper, Jacks & Snapper. Mainly predatory reef fish from the Pacific Ocean, the western part of the Indian Ocean and the Carribean Sea are the ones to watch out for.

Kinda makes me want to give up seafood, (as well as a lot of other food!) since I've been in this class. I don't see it happening, though. I LOVE seafood! And food in general. wink

Anyway, wanted to put this up FYI.

People around my neck of the woods say that they are edible as long as they are not poisonous...confused?

They are a reef predator and toxins will build up as predator eats prey, starting from the plankton. They're at the top of the chain so... you get the idea.

But because you ate it already, I'd say you have your quota for the decade, so wait ten years before you eat barracuda again. grin

B just read up on it from our Fisheries Dept page .... ciguatera poisoning ..... Symptoms range from none at all to severe and incapacitating, and come on within one hour, or be delayed for 24 hours or more. The illness lasts for an average of about 8 days, but in some cases symptoms can take months to years to disappear.

Probably the simplest precaution is not to eat the fish if your hands feel numb after cleaning it, or if there is any suggestion of a stinging sensation after skinning or filleting it. naughty

there is a report of 1500 men dying from ciguatera poisoning during the British naval expedition against Mauritius in 1748 faint but then I guess they could have died of lots of things back then that we treat as minor kids illness these days crazy

so I am guessing your fish were ok !!!!! grin and yummy laugh
