We finally found one fly. He was almost to weak to fly, and walking slowly at that. Their life span is so short, where did he come from???

Come summer, there'll be plenty of 'em.

The fly was looking for someone to roast him.... a fire .... a room heater .... kids with a magnifying glass ... perhaps Neak knitting it a small jacket laugh

For those who don't really think I have to cook crocodile for Aussie and the boys well here is the recipe ....

1kg crocodile tenderloin ... myself I would ensure croc was a goner first but you guys do as you wish grin
24gr caster sugar
12gr table salt
6gr strawberry eucalypt leaves (the leaves have a strong aroma somewhat reminiscent of passion fruit or strawberries)
4gr tonka bean (you grate these like nutmeg they are supposed to taste a bit like vanilla and bitter almonds with hints of caramel pepper and cinnamon but I think they taste like tobacco)

Watercress and avocado salad

2 avocados
1 bunch watercress
1 lemon juiced
15ml olive oil
salt and pepper

Orange dressing

3 golden shallots
25ml water
500ml orange juice
50gr sugar
1 orange rind
50ml grapeseed oil
Salt and pepper

Clean the crocodile of all nerves (yours are probably gone by now). Grind spices and season the tenderloin. Allow to cure for at least 24 hours. dramaqueen
(I would suggest 48 hours and then give it to the dog but suit yourself)
Rinse, sear off and then cook through in an oven about 200c.

Dice avocados and dress with lemon juice, olive oil and seasoning. Pick watercress leaves leaving a tiny stem because those big brave heroes of mine whinge like toddlers if they have long stems on "that green stuff". MrRollieEyes

For the dressing sweat off dice shallots, add sugar and water and cook to a dark caramel. Deglaze with orange juice and reduce to 1/5. Emulsify with oil and adjust the seasoning to taste. The boys love LOTS of salt.

In a plate set the avocado in a ring in the center of the plate. Set the sliced crocodile on top. Garnish with watercress on top, and around the plate alternating with dots of orange dressing......

toe tap

alternatively stand out of the way and let the boys grab whatever and pour sweet chilli sauce over it all and go make a nice cheese omelette for yourself and choose a tasty white wine to get the after taste/smell (shudder) of the croc out of your throat.

This will also work very well with Alligator I would guess...

Bon Appetit mates! dance2

Actually, would this recipe work with fox?

We don't have any gaiters here in London, but we're plagued by wretched foxes.

Or how about coyotes? We have lots of them and man, do they have creepy eyes.

Not much fat on them though, they'd prolly be rather dry.

Yes, I've heard that about coyotes. The need a bit of butter or olive oil in the sauce.

I am not a picky eater at all, but I do draw the line at certaing things...weird animals that are not normally eaten would be one of them.

I do like garlic butter on a good steak but don't think it would do a d*mn thing for something like coyote or crocodile...just sayin'.

I'd much rather crochet fly parkas than eat croc. Blech!
