(I haven't got a clue, btw, but I figure knowing the email server is helpful)
In gmail, I have a certain someone set up to forward all emails from them back to their addy and move my copy to the trash.

There is no one simple answer to this question. A lot depends on the recipient's email client program.
Most email programs have a way to set filters ("rules"). For example, using the Apple Mac's email program, it's fairly simple to create a rule that scans each email as it arrives. Such a rule would just move every mail from a specific sender address and move it to the trash.
Outlook has a similar feature. Web-based email programs (Yahoo!, Hotmail, Gmail, etc.) also have such a feature, but you have to look for it.
