Anyone have recipies? Tis time to pull out the grill, smoker, slow cooker and start grilling, roasting, slow cooking steaks and barbeque.
Some of the best things about spring and summer is the gang gettin together to cook and grill.

It's turning into a beautiful bright, dry spring, but it's windy and cool! We'll get about 4 days of barbecue weather in July, and then it will be windy and cool again, and probably rainy. Still, I'm happy for you. Sob.

Well stop living across the pond in the land of bad teeth. Hahahaha  You are so bad!! I just LOVE BBQ!! One of my favorite recipes are pork baby back ribs from Sam's. Put in a big baking pan and sprinkle liberally with Fiesta fajita seasonings. Bake in the oven COVERED for about an hour until cooked through. Take out and coat on both sides with KC Masterpiece BBQ sauce. Let marinate for a few hours, or overnight, in the fridge. Grill for about 10 minutes on each side. These are fabulous! Another thing I like to make are beef fajitas. I season them well with Fiesta fajita seasoning overnight in the fridge. In the morning, pour lime juice over them and let them marinate all day. Throw them on the grill until done.

Oh, Melody! That sounds awesome. I typically let my fajita meat marinate over night in French dressing, crushed garlic, and lime juice. Then I grill it the next day. So dang tender

Yum, that sounds wonderful. IMO, Texas has the best BBQ out there! It's amazing how many recipes are out there. Around here, people compete when it comes to their BBQ. TJ/ P.S. Did you mean Sam's as in the restaurant/bar or as in Sam's Wholesale? There used to be a Sam's here and they had the BEST dip that they served with their bread sticks. I've never been able to find it anywhere else.  /TJ

So dang tender French dressing, huh? That is an interesting twist I have not heard about. I will have to check that out. PM, I mean Sam's Club. That is where we buy most of our meat down here. Their rib eyes are also superb!

Time to get a Sams membership.
The French dressing will cook off leaving a very tender and slightly sweet beef.
I need to post my recipe for brisket. It's absolutely the best you will ever find

Down in south Texas we grill year round, so I will put the veggies in a bowl to marinate on Sunday and pull them out and put just enough on skewers for that night. I cut up yellow squash, zucchini, purple onions, mushrooms, green/red bell peppers in big chunks and marinate them with Ken's Steakhouse Italian w/ Aged Romano dressing. Ken's Dressing When ready to cook, take out enough for dinner and put on your skewer. Throw on the grill when you put on your meat and turn and baste until ready.

We love BBQing!
I like marinating veggies too ~ I marinate onions, peppers, eggplant, etc. in olive oil and balsamic vinegar, salt and pepper...reallllly good!

My H and I were once part of a BBQ cooking competition, and we won a bunch of trophies!
Our BBQ grill is big enough to BBQ two whole hogs at the same time! For competition, though, we mostly did Boston butts and ribs.
I need to find some pics and post them!

DH grilled salmon for me last night. That, with some roasted redskin potatoes and butter, a four-cheese salad...YUM!!! Sorry, I don't do the steak thing. Blech.

Pappaw's White Sauce (from the Mount Hope Manna Cookbook, Mount Hope Baptist Church)
circa 1978
3/4 c mayonnaise 2 pkg sweet n low 1 tsp vinegar pepper to taste
Mix all ingredients together in a pint jar. Brush on chicken while on barbecue. Serve on side.
(that is word for word out of the cookbook)

I'm making grilled Mediterranean-style steak and vegetable kabobs for dinner tonight. One last meal before I have to give up my beloved Weber BBQ (we aren't allowed to have a BBQ in the apartment).
Kabobs are a great way to have steak if you can't actually afford to buy a steak for every person in your family. I usually serve them with a side of brown basmati rice.

Dang. A strong wind blew over my grill recently and tore it up pretty good. There's no repairing it; I'll have to get a new one.
And for that, I'll have to start seeing some real income soon...
