I just wanted to wish everybody a happy fourth since I don't really say much anymore. I hope everybody cooks good food.....and saves some for me!<P>PS Does anybody have a recipe for potato salad? It's not quite a recipe, I just kinda throw it together! [Linked Image from marriagebuilders.com]<P>This makes a BIG bowl!<BR>I peel, cut up and boil potatoes, approximately 10-12 med. sized. Boil until soft, but not mushy. Also, boil same amount of eggs, then cut them up. Mix potatoes and eggs together in a bowl.<P>Mix mayo (I use Miracle Whip) w/a little milk, then put over potato mixture. I don't know how many cups, but use enough to cover potatoes and eggs. Then, cut up dill pickles and throw those in. If you like onion, be sure to cut up a half of one, more or less to your liking. It gives it extra flavor. Mix everything together and add more mayo, pickles or onions as needed. You just have to experiment a little to get it just right. If you like mustard, you can put some of that in, too. My H doesn't like mustard, so I don't use it.<P>Sorry if this doesn't help you much! It's really very easy to make, but not easy to explain! I'd get the ingredients and do some experimenting! Potato Salad? Well, I make mine pretty much the way Momma does, only I don't use quite so many eggs, use sweet pickle cubes, and I don't use milk. I use Miracle Whip salad dressing sometimes, but prefer mayonnaise.<P>I chop up about 1/2 an onion, and also chop up some green bell pepper. I also add some diced pimentoes for a little color, and salt and pepper to taste. When you get it finished, sprinkly a little paprika over the top.<P>If I don't have enough potatoes, I substitute elbow macaroni.

I make excellent potato salad! (yes I'm bragging) And it's very simple.<P>Peel, cube and cook as many potatoes as you want. I usually do anywhere from 5 to 10 lbs since my family is big.<P>Boil eggs (at least 8) add to potatoes. Chop onion, celery and dill pickle and add to potato and eggs. <P>For dressing, I use Miracle Whip and I add some yellow mustard to it. Mix it up and pour over potatoes. Stir.
