Ok, Roasted Chicken had to be beaten down flat with a hammer, rubbed down with paprika, crushed garlic and onions and salt and pepper. Then baked and broiled. <img border="0" title="" alt="[Big Grin]" src="images/icons/grin.gif" /> Stir fry asparagus and broccolli: both lightly steamed, stir fried in very hot oil with some soy sauce, fresh garlic and pine nuts. The sole was baked in butter/olive oil, lemon juice and capers. Crawfish boiled in cajun seasoning and salt. Who is next?

Cerri's Calorie Laden Lasagna....

1 lb ground pork ssg... I like the Italian seasoned kind
1+ lb ground beef
4C +/- (I don't do the measuring thing much) your choice of tomato saucy stuff.. canned or fresh
2 or 3 tomatoes cut up
1 really large onion cut up
3 or 4 large cloves of garlic
a bunch of spinach leaves chopped
a handful of your favorite kind of mushrooms chopped
any other veggies you feel like adding (broccoli being my favorite)
a big dose of chopped oregano at least a T dried.. I dunno what that measures out to fresh
a bunch of salt
ditto for the pepper
1 lg container cottage or ricotta cheese
about 2 or 3 C swiss or mozzarella cheese (or both!)
9 lasagna noodles

Brown the meat. Drain the grease. Add the tomato sauce, the veggies and the seasoning.

Put a little water in the bottom of a 9x13 pan, add 3 uncooked lasagna noodles.

Layer the meat and cheeses on top, add a second layer of noodles, more meat more cheese, third layer of noodles and end with meat and cheese on the top.

Cover tightly with foil. Bake at ohhhhhh.... I dunno...... 325? 350? for an hour and half to two hours. Until the top noodles are tender.

Put in box, set on seat of vehicle to take to potluck, move from seat, hand to hubby and watch the juice run out of box onto hubby's clean shirt..... next time.... use a deeper pan... <img border="0" title="" alt="[Big Grin]" src="images/icons/grin.gif" /> <img border="0" title="" alt="[Wink]" src="images/icons/wink.gif" />

OK here is the berry cobbler

1 cup fresh or frozen raspberries
1 cup fresh or frozen blueberries
2 cups fresh or frozen sliced strawberries
1 1/2 cups sugar, divided
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup butter or margarine

Pre heat oven to 375
combine fruit and 1/2 cup sugar, mix gently and set aside

Combine flour, remaining sugar, baking powder and salt in medium mixing bowl, mix well
Add milk, beat until smooth, about 2 minutes

Place butter in medium baking dish and place dish in oven to melt butter
Spoon batter evenly over melted butter

Drain fruit mixture and spoon over batter, do not stir
Bake for 20 minutes until golden brown

Serve!

Peanut Butter Squares (this one will kill ya) <img border="0" title="" alt="[Big Grin]" src="images/icons/grin.gif" />

2 sticks margarine
2 cups peanut butter
1 pound powdered sugar
12 ounces milk chocolate chips

Melt margarine and mix everything except chocolate in a large bowl
Spread on a cookie sheet
Melt chocolate (I usually add a little butter so the chocolate spreads easier) and spread on top
Refrigerate to cool

Serve!

OK, now if we aren't all fat enough, this one here is our favorite! <img border="0" title="" alt="[Big Grin]" src="images/icons/grin.gif" /> <img border="0" title="" alt="[Big Grin]" src="images/icons/grin.gif" />

Chocolate Peanut Butter Pie

1 6 ounce ready grahm cracker pie crust
14 ounces Creamy chocolate sweetened condensed milk
1/4 cup creamy peanut butter
8 ounces frozen whipped topping (thawed)

In large bowl, combine sweetened condensed milk and peanut butter, mix well. Fold in whipped topping. Spoon into crust and place in freezer for 6 hours.

Serve frozen.

Allright, that should put so inches on our hips! As for the other dessert we brought, you need to talk to my lovely wife regarding that.

Ok - Finally the moment we've all been waiting for... S'Mores Galore!!!

20 (whole) Honey Grahm Crackers
6 1.55 oz Chocolate bars
1 pkg (16oz) mini marshmallows
6 TBS butter or margarine
3 TBS milk

1) Preheat oven to 350 - place SINGLE layer of grahm crackers on 9X11 pan (break to fit - you will have left over crackers) - toast in oven for 2 mintues.

2) Coarsley break remaining grahm crackers into large bowl - set aside. Chop 3 chocolate bars into pieces and set aside.

3) combine 3 cups of marshmallows, all of milk, and 3 TBS of butter into large microwave safe bowl. Microwave for 1 - 2 minutes - stir until marshmallows are smooth - add the chocolate that is already chopped to marshmallow mix. Stir until smooth!! Spread Chocolate-Marshmallow mix over grahm crackers in pan.

4) Chop rest of chocolate into small pieces

5) Melt remaining butter and toss over broken crackers in bowl. Add rest of Marshmallows and chopped chocolate. Mix well. Spread mix evenly over grahm crackers in pan!!

6) Bake 8 - 10 minutes

**NOTE** I always leave my bars in the pan overnight - DO NOT CUT THEM RIGHT AWAY!! (unless you want a mess:)) If you can let them cool overnight in the pan, it will be easier to cut them!!! Oh yeah, you can always add more chocolate <img border="0" title="" alt="[Smile]" src="images/icons/smile.gif" /> Just an FYI!

Mmmm..... Can you taste the chocolate yet?!?!?
