I have been trying to make Divinity. My Egg Whites fluff nicely and everything seems to go okay then right in the middle of it all my Divinity deflates.<P>I have vowed to keep trying til a get it right.<P>I have a kitchenAid Kitchen center and I have been using the recipe in their little cook book. Does anyone out there have a foolproof recipe or any tips.<P>This is what I've already been told by Mom.<P>1. Egg Whites must be room temperate - Check<BR>2. Make sure bowl is completely clean and dry - Check<BR>3. Don't ever beat - Not sure about that one, but test to make sure the peaks are right.<BR>4. Divinity<BR> Yield: 1.25 lbs<P> 2 1/3 cup white sugar<BR> 2/3 cup corn syrup<BR> 1/2 cup water<BR> 1/4 tsp salt<BR> 2 egg whites<BR> 1/2 tsp vanilla or other desired flavoring<P> Measure sugar, corn syrup, water, and salt into saucepan; cook and<BR> stir over low heat until dissolved. Increase heat until mixture<BR> boils; cook, without stirring, to the very hard ball stage (265F).<BR> During this cooking the crystals which form on sides of pan should<BR> be wiped down with a damp cloth wrapped around the tines of a fork.<BR> Have egg whites stiffly beaten; gradually pour hot syrup over them.<BR> Add flavoring. Pour into oiled pan 8" square. While still warm,<BR> cut into squares.<P> Variations:<BR> Orange: Replace vanilla with 3 tbsp grated orange rind.<P> Almond: Add 1/3 cup almonds which have been blanched and finely<BR> chopped.
