Well we haven't had a virtual BBQ or summer picnic in a loooong time. Anyone interested?

Ooooh! Oooooh!

Though I'm having a BBQ identity crisis. See, I was born and raised in Texas, and we did barbeque properly there, yea and verily..

Then we moved to North Carolina, where they give you pulled pork in a vinegar sauce and call it barbeque. It's good, but it's NOT barbeque!

Then we moved to South Carolina, where the barbeque sauce has mustard in it?!

At least I'm going to San Antonio next month for work!

I am having party i a couple of weeks and it was suggested that I have pulled pork. I have never made this, let alone for a large crowd. Any pointers out there? I could really use the help on this. Thanks.

Ok, so far 1 vote for 'a place down under'.....now need a more definite location. So we can put a pix of it and then start cookin'.

What are the differnt types of BBQ do we have out there? Here in Hawaii Kiawe wood rocks.

I'm bringing deviled eggs.

Deviled Eggs

Hardboil a dozen eggs. Remove shell carefully so that whites are smooth. Cut the eggs in half top to bottom (not around the middle). Scoop out the hardboiled yolk with a small spoon into a mixing bowl. Save the whites. Crumble the yolks with a fork, add mayonnaise until the texture is just to the creamy stage. Then add mustard, salt, pepper, and sweet pickle relish to taste. Take the yolk mixture and place back into the depression in the whites – simple way is with a spoon – so that there is a little mound of yolk mixture. If you’re fancy you can load into a pastry bag and pipe it in. Finish with a sprinkle of paprika over the top of the egg.

Know about how many people to expect?

From what I understand, pulled pork is usually cooked over low heat in a wood smoker for 10-12 hours. The fat melts and the cartilage disintegrates, so you can literally pull the meat apart with your hands. I've also seen some crock-pot recipes for it. Just google for "pulled pork"; I found tons of recipes that way. Here is a recipe for Carolina BBQ sauce.

If there will be a lot of people, depending on the occasion, you might try a pig pickin' - check the wiki. You need special equipment for this, like one of these. Depending on where you are you could rent one of these cookers.

My H and I love tapas and have made this appetizer for parties - it's always a big hit:

Dates - 1 bag, depends on how many you want to make.
Whole almonds, optional
1 pd bacon
1 Jar roasted red peppers (8 oz or so, not the tiny jar)
Olive oil
Salt & pepper

Make a small slice lenghwise down each date, stuff with 1 almond. (Optional - these are great with or withhout nuts)

Wrap each date with 1/2 slice uncooked bacon, secure with a toothpick.

Bake dates in 400 degree oven until bacon is browned and beginning to crisp.

While dates are cooking, prepare red pepper sauce.

Drain jar of peppers, add to blender with salt and pepper to taste. Blend for a couple of minutes, then begin adding olive oil in a stream until incorporated...probabably between 1/4 and 1/3 cup of oil. Sauce should be a somewhat thin consistency but not watery.

Serve dates with sauce and enjoy!

Eaglesoar- can you make a few deviled eggs without the relish? I hate pickles and all things pickley.

I make a good spinach dip that you load into one of those round loaves of bread.

Pack of spinach, chopped, thawed and water squeezed out.
Equal parts mayo and sour cream
sliced water chestnuts
sliced scallions
pack of onion soup mix
hot sauce to taste

taste better if you make a day before, the flavors marry nicely, but I add the water chesnuts right before serving to maitain the crunchy component.

Jean - absolutely. I'll make another dozen without the pickles. I like spinach dip, too. I add a little chopped red bell pepper to mine for color. Yum!

Count me in!!! <img src="/ubbt/images/graemlins/cool.gif" alt="" /> Does Mel Gibson's have a house down under? Don't have a pic but I'd love to stop in and visit...with all those kids they must have a pool.

Since I'm close to philly I could bring Cheesesteaks and soft pretzels (both go great w/ beer). I'll make something w/ Philadelphia Cream Cheese....

Philly Taco Dip:
Spread 1 bar Philadelphia Cream cheese on bottom of 9x9 baking dish
Cover with 1 can Texas Chili (I like HOT)
Cover w/ colby-jack cheese and taco seasoning
Heat until cheese is melted

eat with tortia chips

Fried Jal-a-peg-nose...or Jalepenos

You'll need 1 box tempura mix, mixed up and ready to go.

1 large can of tuna
1 brick cheddar cheese, sliced
Jalepenos, slit with the ends removed and the seeds and membranes taken out (if'n you aren't used to doin' it, cut them up wearing gloves...jalepeno juice under your nails is infuriating)

Stuff the peppers with the tuna and a slice of cheese. Dredge in the tempura batter and deep fry till golden. Serve hot with ranch dressing to dip in.
