They didnt have Shiner here when I moved to CA. I remember when they first 'imported' it... it was so nice.

Do you know they do not have Chili-con-queso in California?!? All this Mexican food, no CCQ. They say it's not really Mexican <img src="/ubbt/images/graemlins/confused.gif" alt="" /> I miss good Tex-Mex. There's a Papasito's right by Intergalatic Airport in Houston... I hit it In and Out on every trip! <img src="/ubbt/images/graemlins/grin.gif" alt="" />

Papasitos isn't even real TexMex imo.

But I had a Mexican mil....so I'm jaded.

Do you know that when I lived on the coast I couldn't get red corn tortillas anywhere? I had to drive to San Antonio and buy out HEB. Stocked my freezer up with them each trip.

What's enchiladas without red corn torts?

That's the only thing my mil didn't teach me how to make. She passed away before I could learn it from her.

She made chicken mole for my wedding feast. She also made my wedding cake. I had the prettiest cake ever.

I'm a bit misty myself, honey.
My son would be 16 tomorrow.
He died when he was just 6 weeks old of meningitis - I don't think of it a lot anymore, but the birthday always gets to me too.
And I have always felt he's watching over me...
